Hale's Helles Dopplebock

 This homebrewed helles dopplebock from Philip Hale is yeasty. I’ll have to ask him what yeast strain he uses in this. The sweetness of the malt, like Bananas and honey, is cut by the strong flavor of alcohol more so than the slightly bitter hops.

  1. This is a very drinkable beer with nice complexity.
    The yeast the White labs WLP833 German Bock Lager Yeast.
    It is my favorite yeast for Bocks and even Helles. It doesn't attenuate great, but makes the beer malty and full-bodied.

    The recipe is based on one from Jamil Zainasheff and is extremely simple.
    No specialty malts, just 37% Munich malt and 63% Pilsner malt (both German).

    1. Thanks for that update. These samples you gave me are good motivation to rearrange the basement to allow for some better conditions for lagering.
